maple-vanilla roasted pears
This recipe is particularly good for when you need to make a dessert without eggs or gluten.
- 2 tablespoons butter
- ½ cup brown sugar
- 3 pears, peeled, halved lengthwise and cored
- ¼ cup pure maple syrup
- 1 tablespoon pure vanilla extract
- ¼ teaspoon cinnamon (optional)
Preheat oven to 400ºF. Rub butter over bottom of rimmed baking sheet. Sprinkle with sugar. Place pears, cut side down, on pan. Stir together maple syrup, vanilla and cinnamon; drizzle over pears. Roast, spooning sauce over pears occasionally. If sugar gets too sticky and sprinkle a little water over top. Roast until tender when pierced with tip of knife and sugar is caramelized, 40 – 45 minutes. Serve warm with sauce spooned on top and vanilla ice-cream.
